Mexican Meatloaf
Ingredients
1 1/2 lb lean ground beef
1 cup crushed tortilla chips
3/4 cup shredded pepper jack cheese
1 onion
1 oz taco seasing
2 eggs
1/2 cup milk
1/4 cup red taco sauce (I recommend tapatio)
Directions
Preheat oven to 350
Dice your onion
Thouroughly combine beef, tortilla chips, pepper jack, onion, and taco seasoning.
Whisk eggs, milk, and taco sauce together in a separate bowl.
Combine both mix until thouroughly combined.
Press mixture into a 9x5 loaf pan, top with some taco sauce, you also can’t go wrong with a strip of bacon.
Bake for 45-60 minutes. If there is bacon on top it’s done when the bacon is cooked.
