Mexican Meatloaf

Ingredients

  • 1 1/2 lb lean ground beef

  • 1 cup crushed tortilla chips

  • 3/4 cup shredded pepper jack cheese

  • 1 onion

  • 1 oz taco seasing

  • 2 eggs

  • 1/2 cup milk

  • 1/4 cup red taco sauce (I recommend tapatio)

Directions

  • Preheat oven to 350

  • Dice your onion

  • Thouroughly combine beef, tortilla chips, pepper jack, onion, and taco seasoning.

  • Whisk eggs, milk, and taco sauce together in a separate bowl.

  • Combine both mix until thouroughly combined.

  • Press mixture into a 9x5 loaf pan, top with some taco sauce, you also can’t go wrong with a strip of bacon.

  • Bake for 45-60 minutes. If there is bacon on top it’s done when the bacon is cooked.
